Tiger Tail Ice Cream

Tiger tail is actually a popular flavor of ice cream in Canada and the combination of orange and licorice works surprisingly well together. I like to serve these in waffle cones but it is fantastic on its own too!

Ingredients

Orange Ice Cream

  • 1 cup cashew milk beverage or half n half or coconut milk beverage for nut-free
  • 5 egg yolks use pasteurized eggs if you are concerned about raw egg
  • 1 1/2 cups heavy cream or cashew cream, or a 13.5 ounce can coconut cream for dairy-free
  • 1/8 teaspoon salt
  • 3/4 teaspoon stevia glycerite or another 1/2 cup allulose
  • 2 teaspoons orange extract
  • 1/2 teaspoon orange oil
  • 1/4 cup MCT oil optional, makes for a softer ice cream
  • orange food coloring natural, to taste

To Finish

  • 1 batch Licorice Caramel cooled slightly, see recipe below

Instructions

  • Add all the ice cream ingredients to a blender and blend until completely smooth. Pour into an ice cream maker and process according to manufacturer’s directions.
  • Once churned, transfer to a cold freezer-safe container. As you spoon the ice cream into the container, drizzle the caramel over top, then spoon more ice cream over top and drizzle again with the caramel to create a marbled effect.
  • Freeze until set, at least 4 hours and preferably overnight.

Notes

If you do not want to consume raw eggs, you can either buy eggs that are already pasteurized or do it yourself, if you have a sous vide machine. Simply heat to 135ºF for two hours. The egg will have a milky look to the white when you crack it but it is fine.
Nutrition is for the orange ice cream alone. See nutrition variations for the combination with the caramel.

Licorice Caramel

Caramel with anise notes of licorice. I like to add some charcoal powder to complete the black licorice look but you can just as easily leave it out.

Ingredients

  • 1/2 cup heavy cream or 3/4 cup coconut cream or cashew cream for dairy-free
  • 2 tablespoons butter omit for dairy-free
  • 1/3 cup allulose
  • 1/8 teaspoon salt
  • 2 teaspoons anise extract
  • black food coloring natural, to taste (activated charcoal works well)

Instructions

  • Combine all ingredients except for anise extract in a small pot over low heat and bring to a simmer. Simmer for 15 minutes, without stirring. Season to taste with more salt. Stir in the extract and color, if using. Pour into a glass jar and store in the refrigerator. It will thicken more as it cools.
