Licorice Caramel

Caramel with anise notes of licorice. I like to add some charcoal powder to complete the black licorice look but you can just as easily leave it out.

  • 1/2 cup heavy cream or 3/4 cup coconut cream or cashew cream for dairy-free
  • 2 tablespoons butter omit for dairy-free
  • 1/3 cup allulose
  • 1/8 teaspoon salt
  • 2 teaspoons anise extract
  • black food coloring natural, to taste (activated charcoal works well)

Instructions

  • Combine all ingredients except for anise extract in a small pot over low heat and bring to a simmer. Simmer for 15 minutes, without stirring. Season to taste with more salt.
