Baked Camembert with Blackberry Jam
Camembert is similar to brie but with a slightly stronger flavor so feel free to use brie if you prefer it. However, the stronger flavor is nice to stand up to a bright sweet and tart jam topping (any berry would be good here). I like to serve this with parmesan crisps or homemade low carb crackers or crispbread. Served warm, the cheese become soft and scoopable, perfect for holiday platters.

Ingredients
Blackberry Jam
- 1 cup frozen blackberries
- 1/4 teaspoon glucomann powder
- pinch of salt
- 1/8 teaspoon stevia glycerite or other sweetener to taste
- 1 tablespoon lime juice 1 lime
Baked Cheese
- 1 wheel camembert cheese
- 1 batch blackberry jam above
Instructions
For the Jam
- Combine berries and glucomann in a glass bowl and stir to distribute evenly.
- Cover the bowl with a plate and microwave for 3 minutes. After the 3 minutes, stir and microwave in 30 second bursts, stirring after each one until desired consistency is reached.
- Stir in lemon and vanilla, if using and refrigerate or use warm. Will keep one week refrigerated.
For the Baked Cheese
- Preheat oven to 350ºF.
- Remove any plastic on the cheese and place the wheel back into the wooden box it comes in.
- Score a cross through the top, cutting to the edges. Spread jam on top.
- Bake in box for 15-20 min, no longer as the cheese begins to harden if baked beyond this point. Serve immediately with low carb crackers.
