Batty For Hummus

This is an easy and quick no-cook way to prepare a smooth and flavorful hummus. I have added paprika and harissa to half the batch and blue spirulina to the other half and swirled them together to represent the night sky. A spoonful colored with turmeric looks like a moon in the hummus bowl when served with black bat crackers for a fun Halloween appetizer. I like to make the crackers and even the hummus a day ahead and then color the hummus just before serving.

Ingredients

  • 1 batch Zucchini Hummus or your preferred hummus
  • paprika to taste, or orange food color, natural, to taste
  • harissa to taste, or orange food color, natural, to taste
  • turmeric to taste, or yellow food color, natural, to taste
  • blue spirulina or blue food color, natural, to taste
  • 1 batch Black Bat Crackers

Instructions

  • Divided the hummus in half into two bowls and set one large spoonful aside for later. Add the blue spirulina to one half and stir until evenly mixed. Repeat for the paprika and harissa (I find that blending this works best to bring out the orange color). Stir the turmeric into the reserved spoonful. Alternatively, use natural food coloring to color each portion of the hummus.
  • To serve, transfer the orange color hummus and blue color to one new bowl, keeping them in halves and then gently smooth the surface with a spoon and swirl a bit to create a gradient that looks like the night sky. Finally, spoon the yellow on top to look like a moon. Serve with bat crackers. I like to place one bat in front of the moon.

Notes

Nutrition will vary depending on how much coloring you add and if you use dye or whole ingredients but should be close to the combined values for each the Zucchini Hummus and Black Bat Crackers.
