Whipped Goat Cheese, Strawberry, and Tarragon Bruschetta with Balsamic Reduction
Sweet, tangy, and herbal – this appetizer bridges the sweet and savory sides for a delicious appetizer. Feel free to swap the goat cheese for a dairy-free cream cheese if you’re looking for something dairy-free. I like to make the bread and balsamic reduction at least a day ahead for easier serving.

Ingredients
Balsamic Reduction
- 1/2 cup balsamic vinegar
- 1/4 cup allulose optional, yields a thicker and sweeter reduction
Crostini
- 1 keto bread recipe formed as a baguette and sliced thin into 12 slices
- olive oil for brushing
Whipped Goat Cheese
- 8 ounces goat cheese at room temperature, or dairy-free cream cheese such as Kite Hill for dairy-free
- 1/4-1/2 cup heavy cream as needed, or cashew cream for dairy-free
To Assemble
- 12 strawberries sliced thin
- 2 tablespoons tarragon
- salt and pepper to taste
Instructions
For the Balsamic Reduction
- Combine the balsamic and allulose, if using, in a small pan. Bring to a boil and then reduce the heat to a simmer. Simmer until the volume is reduced by half and the mixture is thick like syrup. It will thicken a bit more once cool. You can adjust the consistency as needed by adding water if it becomes too thick. Let cool completely. The reduction will keep for up to a week.
For the Crostini
- Preheat the oven to 350ºF. Slice bread thin and place on a rimmed baking sheet. Brush with olive oil and bake at 350ºF for 10-20 minutes, or until crisp and golden. Set aside to cool.
For the Whipped Goat Cheese
- Beat the goat cheese with an electric mixer until smooth and then beat in the heavy cream until evenly mixed. Transfer to a piping bag (or a ziplock bag and then cut one of the corners to act as a piping bag after it is filled).
To Assemble
- Pipe whipped cheese over bread slices. Arrange sliced strawberries over top and then sprinkle with tarragon. Finally, drizzle with balsamic and season to taste with salt and pepper, if desired before serving.
