Almond Waffles with Fresh Strawberries, Rose Petal Jam, Whipped Crème Fraîche, Lemon Zest, Sugar-Free Honey
Light and tender waffles get a textural and nutritional boost from a bit of protein powder. These are flavored with almond, which pairs well with sweet and tart strawberries, a floral rose jam, and a sweet, tangy, and rich whipped crème fraîche. Feel free to swap this for regular whipped cream or coconut whipped cream for dairy-free. Yogurt makes an excellent version too. A few sliced toasted almonds would be a great addition. Ingredients
Almond Waffles
- 1/2 cup almond flour blanched
- 1 tablespoon coconut flour
- 2 tablespoons protein powder vanilla flavor or unsweetened
- 2 tablespoons monk fruit powdered
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 ounces cream cheese softened, or sour cream, or Kite Hill cream cheese for dairy-free
- 2 tablespoons butter melted, or butter flavored coconut oil for dairy-free
- 1 teaspoon almond extract
- 3 eggs
- avocado oil spray for the waffle iron
Whipped Crème Fraîche
- 1/2 cup crème fraîche substitute yogurt for lower fat, or dairy-free yogurt for dairy-free
- stevia glycerite to taste
- pinch salt
- splash vanilla extract
To Garnish
- 4 servings Rose Petal Jam
- lemon zest
- keto honey store bought (or use dandelion jelly, slightly melted, which has a very similar taste)
- 6 strawberries sliced
- mint leaves optional for garnish
- edible flowers optional for garnish
Instructions
For the Waffles
- Combine all ingredients in a blender and process until completely smooth.
- Heat a waffle iron and spray it with avocado oil spray. Spoon the batter onto the iron and cook according to your waffle iron’s directions. Generally, 1/4 cup of batter onto the iron. Cook for 4 minutes, until crisp. Repeat with remaining batter.
For the Whipped Crème Fraîche
- Add the crème fraîche, stevia, salt, and vanilla to a bowl and beat with an electric mixer until they reach soft peaks.
To Serve
- Place waffles onto serving plates, spoon rose jam along side, top with berries, whipped crème fraîche, and add the zest of a lemon over top, to taste. Garnish as desired and serve immediately.
Notes
Makes 8 small waffles or 4 large.
