Almond Waffles with Fresh Strawberries, Rose Petal Jam, Whipped Crème Fraîche, Lemon Zest, Sugar-Free Honey
Light and tender waffles get a textural and nutritional boost from a bit of protein powder. These are flavored with almond, which pairs well with sweet and tart strawberries, a floral rose jam, and a sweet, tangy, and rich whipped crème fraîche. Feel free to swap this for regular whipped cream or coconut whipped cream for dairy-free. Yogurt makes an excellent version too. A few sliced toasted almonds would be a great addition. For the Waffles
Combine all ingredients in a blender and process until completely smooth.
Heat a waffle iron and spray it with avocado oil spray. Spoon the batter onto the iron and cook according to your waffle iron’s directions. Generally, 1/4 cup of batter onto the iron. Cook for 4 minutes, until crisp. Repeat with remaining batter.
For the Whipped Crème Fraîche
Add the crème fraîche, stevia, salt, and vanilla to a bowl and beat with an electric mixer until they reach soft peaks.
To Serve
Place waffles onto serving plates, spoon rose jam along side, top with berries, whipped crème fraîche, and add the zest of a lemon over top, to taste. Garnish as desired and serve immediately.
