Almond Waffles with Fresh Strawberries, Rose Petal Jam, Whipped Crème Fraîche, Lemon Zest, Sugar-Free Honey

Light and tender waffles get a textural and nutritional boost from a bit of protein powder. These are flavored with almond, which pairs well with sweet and tart strawberries, a floral rose jam, and a sweet, tangy, and rich whipped crème fraîche. Feel free to swap this for regular whipped cream or coconut whipped cream for dairy-free. Yogurt makes an excellent version too. A few sliced toasted almonds would be a great addition. Inspired by the restaurant Mints and Honey.

Ingredients

Almond Waffles

Whipped Crème Fraîche

  • 1/2 cup crème fraîche substitute yogurt for lower fat, or dairy-free yogurt for dairy-free
  • stevia glycerite to taste
  • pinch salt
  • splash vanilla extract

To Garnish

  • 4 servings Rose Petal Jam
  • lemon zest
  • keto honey store bought (or use dandelion jelly, slightly melted, which has a very similar taste)
  • 6 strawberries sliced
  • mint leaves optional for garnish
  • edible flowers optional for garnish

Instructions

For the Waffles

  • Combine all ingredients in a blender and process until completely smooth.
  • Heat a waffle iron and spray it with avocado oil spray. Spoon the batter onto the iron and cook according to your waffle iron’s directions. Generally, 1/4 cup of batter onto the iron. Cook for 4 minutes, until crisp. Repeat with remaining batter.

For the Whipped Crème Fraîche

  • Add the crème fraîche, stevia, salt, and vanilla to a bowl and beat with an electric mixer until they reach soft peaks.

To Serve

  • Place waffles onto serving plates, spoon rose jam along side, top with berries, whipped crème fraîche, and add the zest of a lemon over top, to taste. Garnish as desired and serve immediately.

Makes 8 small waffles or 4 large.
