High Protein Chocolate Waffles With Vanilla Cream Sauce
These waffles are custardy and soft inside with a crisp outer shell. They will lose their crispness rather quickly so I like to enjoy these right off the waffle iron with a drizzle of cream sauce and a few fresh raspberries.

Ingredients
Cream Sauce
- 1/2 cup low-fat cottage cheese
- 1/3 cup cashew milk or almond or coconut milk beverage, plus more as needed
- 1/4 teaspoon stevia glycerite or more to taste, or any sweetener you prefer to taste
- pinch of salt
- 1/2 teaspoon vanilla extract
Waffles
- 1 cup low-fat cottage cheese
- 2 eggs
- 2 tablespoons protein powder sugar-free vanilla flavor or chocolate flavor work here
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 3 tablespoons cocoa powder
- 1/4 teaspoon salt
- 1/4-1/2 teaspoon stevia glycerite or 3 tablespoons monk fruit, powdered, or to taste
To Serve
- 1/4 cup fresh raspberries optional
Instructions
- Combine all cream sauce ingredients in a blender and blend until completely smooth. Transfer to a serving bowl and set aside. Do not clean the blender. Add all the waffle ingredients the uncleaned blender and blend until completely smooth.
- Heat a waffle iron and spray it with avocado oil spray (this is important to prevent sticking and you must spray between cooking all the waffles). Spoon the batter onto the iron and cook according to your waffle iron’s directions. Generally, 1/4 cup of batter onto the iron. Cook for 4 minutes, until crisp. Repeat with remaining batter. Because this recipe makes 8 mini waffles, I like to cook them on an iron that does 4 waffles at a time, such as the one here.
