Tomato Tart

Soy wrappers take the place of phyllo dough here for this easy and delicious tomato tart. I like to garnish this with fresh basil. This will not crisp up like traditional phyllo dough though the outermost edges will become crisp.

Ingredients

  • 8 Roma tomatoes cut into 1/8-in thick slices
  • salt to taste
  • 1 package soy wrapper sheets 20 sheets
  • 1/2 cup butter melted
  • 1/2 cup Parmesan cheese grated, divided
  • 1/2 onion 1 cup sliced, cut as thin as possible (I like to use a mandolin but a sharp knife works too)
  • 1 cup mozzarella cheese shredded
  • 1 tablespoon fresh thyme leaves
  • 4 tablespoons basil leaves sliced thin, optional

Instructions

  • Preheat oven to 300ĀŗF.
  • Lay the sliced tomatoes on top of paper towels and generously salt them. Allow to stand for 15 minutes while you prepare the tarts (this will draw out excess moisture and simultaneously season the tomatoes). Press gently with more paper towels to remove any surface moisture.
  • Line two large baking sheets with parchment paper and lightly spray with avocado oil. Lay down 4 sheets of the soy wrap so that they do not touch on the two baking sheets (2 tarts per sheet for a total of 4 tarts to be assembled). Brush each piece with melted butter and sprinkle with 1-2 teaspoons of Parmesan. Repeat this layering so that you have 5 sheets per tart, pressing firmly so that each sheet sticks to the sheet below.
  • Brush the top sheet with remaining melted butter and remaining Parmesan. Scatter onions over top and then divide the mozzarella among the tarts. Top with tomato slices in a single layer so that they overlap slightly. Sprinkle with thyme and then bake until golden, 20 minutes. Cool on the baking pan for 5 minutes, transfer to paper towels to remove any excess oil and serve with basil over top, if desired.
