Easy Buffalo Cauliflower
Cauliflower florets get tossed in a savory spice blend before a quick, hot roast and a coating of buffalo sauce. A final broil produces a delicious, lightly charred and tender yet crisp treat for dipping into your favorite sauce. I like to serve these with ranch and some celery sticks. Use low-fat, high protein ranch to increase the protein while keeping the fat down for a healthy appetizer or snack.

Ingredients
Cauliflower
- 4 cups cauliflower 1 head, cut into florets
- 2 teaspoons glucomann powder
- 1/2 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon smoked paprika
- 1/8 teaspoon black pepper
- 1/2 tablespoon avocado oil spray
Buffalo Sauce
- 1/2 cup buffalo sauce or 4 tablespoons Frank’s red hot sauce and 3 tablespoons butter with salt to taste
- ranch or blue cheese dressing for serving homemade or store-bought
Instructions
- Preheat the oven to 450ºF and line a rimmed baking sheet with foil. Rub with a bit of avocado oil to prevent sticking and set aside.
- Add the cauliflower to a large bowl. Stir together the glucomann, salt, garlic powder, onion powder, paprika, and pepper. Sprinkle over cauliflower and toss to coat evenly. Spray the cauliflower with avocado oil as you toss to coat lightly with oil. Spread onto the prepared sheet and set the sheet onto a rack in the lower third of the oven. Bake at 450ºF for 20 minutes, or until golden, stirring half way through baking.
- Clean the bowl and add the buffalo sauce. When the cauliflower is baked, add to the bowl with sauce and toss to coat. Spread back onto the baking sheet and return to the oven. Bake for 5 more minutes, turn the broiler on high and broil for another 2-4 minutes, or until lightly blistered.
- Serve with ranch, if desired.
