Pesto Scrambled Eggs with Sausage

Quick, easy, and flavorful, stirring pesto into almost set eggs makes a delicious keto-friendly breakfast. Be sure to check the sausage you use as they can vary in carbohydrate level.

Ingredients

  • 3 eggs
  • salt and pepper to taste
  • 1/2 tablespoon butter or butter flavored coconut oil if dairy-free
  • 1 sausage pre-cooked, sliced
  • 1 tablespoon pesto make your own for dairy-free

Instructions

  • Whisk eggs with salt and pepper, to taste and set aside.
  • Melt butter in a large skillet over medium high heat. Add the sausage and heat through then transfer to a serving plate, leaving any excess oil in the pan.
  • Add the eggs and scramble until barely set. Stir in pesto and then transfer to the plate with sausages and serve.

Pesto (Dairy-Free)
Servings: 8
Prep Time: 5 minutes, Ready In: 5 minutes
Ingredients: 
  • 2 cups packed fresh basil
  • 3 tablespoons pine nuts
  • 3 large cloves garlic peeled
  • 2 tablespoons lemon juice
  • 3 tablespoons nutritional yeast
  • 1/4 teaspoon sea salt plus more to taste
  • 2 tablespoons avocado oil
  • 2 tablespoons extra virgin olive oil
Instructions: 
  • Add all ingredients except oils to a blender and puree until mostly smooth.
  • With the blender running, slowly drizzle in avocado oil until smooth. Turn off blender and stir in olive oil (reason being, it can turn bitter when blended).
