Whisk eggs with salt and pepper, to taste and set aside.
Melt butter in a large skillet over medium high heat. Add the sausage and heat through then transfer to a serving plate, leaving any excess oil in the pan.
Add the eggs and scramble until barely set. Stir in pesto and then transfer to the plate with sausages and serve.
Add all ingredients except oils to a blender and puree until mostly smooth.
With the blender running, slowly drizzle in avocado oil until smooth. Turn off blender and stir in olive oil (reason being, it can turn bitter when blended).
