Crostini with Tomato, Pesto, and Burrata

Use a good store bought pesto and pre-made bread to prepare this easy and delicious appetizer with classic flavors.

Ingredients

  • 1 batch keto bread baked as a baguette and sliced into 12 slices
  • 2 medium tomatoes about 1 cup sliced
  • 8 ounces burrata torn
  • 1/2 cup pesto

Instructions

  • Toast the keto bread to make crostini: bake slices at 350ºF until dry and crisp at the edges and beginning to brown, about 15 minutes, flipping half way through.
  • Slice tomatoes and lay them on a paper towel to absorb excess moisture. Season with salt and pepper.
  • When bread is toasted, add pesto, top with tomato slices, and finally torn burrata cheese. Serve immediately.

Notes

Makes 12 crostini, serving size is one crostini.
