Olive Tapenade

This is a bright and briny spread that is perfect as an appetizer, stirred into soups, or added to sandwiches. You can also eat this with vegetables, cheese crisps, or pork rinds as a snack.

Ingredients

  • 1 cup pitted olives use any you like here such as Kalamata or a medley of mediterranean flavored olives, drained
  • 2 cloves garlic peeled
  • 2 tablespoons capers drained
  • 1/4 cup parsley
  • 1 tablespoons lemon juice
  • zest of 1 lemon
  • 2 tablespoons olive oil
  • pepper to taste

Instructions

  • Combine all ingredients in a blender and process until finely chopped. Season to taste with pepper. Let sit for at least 30 minutes for flavors to meld.
