Crostini with Tomato, Pesto, and Burrata
Use a good store bought pesto and pre-made bread to prepare this easy and delicious appetizer with classic flavors.

Ingredients
- 1 batch keto bread baked as a baguette and sliced into 12 slices
- 2 medium tomatoes about 1 cup sliced
- 8 ounces burrata torn
- 1/2 cup pesto
Instructions
- Toast the keto bread to make crostini: bake slices at 350ºF until dry and crisp at the edges and beginning to brown, about 15 minutes, flipping half way through.
- Slice tomatoes and lay them on a paper towel to absorb excess moisture. Season with salt and pepper.
- When bread is toasted, add pesto, top with tomato slices, and finally torn burrata cheese. Serve immediately.
Notes
Makes 12 crostini, serving size is one crostini.
