Lamb Kofte
This is keto-friendly richly spiced lamb dish (you can use beef as well) that is so flavorful you’ll want to make it again and again! Serve it with tzatziki and a salad.

Ingredients
- 4 garlic cloves
- 1/2 cup pine nuts toasted
- 2 teaspoons smoked paprika
- 2 teaspoons ground cumin
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground cloves
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground cinnamon
- 2 lbs ground lamb
- 1 small onion
- 1 jalapeño seeds removed (leave them in if you want the dish to be more spicy)
- 1/2 cup fresh cilantro
- 1/2 cup fresh parsley
- 1/2 cup fresh mint
- 2 teaspoons unflavored gelatin
Instructions
- Combine the garlic, spices, and pine nuts in a food processor and process until a fine paste forms. Remove the spice paste to a large bowl.
- Place the onion and jalapeño into the food processor and pulse until very finely cut. Transfer to a fine mesh strainer and press out as much liquid as possible. Remove the onion to the same bowl as the spice paste.
- Process the parsley, cilantro, and mint until finely chopped but not a paste, also adding these to the bowl containing the spice paste.
- Add the lamb and gelatin to the bowl and mix everything well. Form into 2 inch wide, 1/2 inch thick patties. Place on a baking sheet lined with foil and cover with plastic wrap. Allow to marinate for at least an hour and up to two days.
- Cook over medium high heat on the grill (you can also sear these in a hot cast iron pan or bake them in the oven at 400F for 15-20 min or broil for about 4 min per siduntil browned and cooked through, about 4 minutes on each side.
- Serve with tzatziki and a salad.
Notes
You can form the patties and then freeze the whole tray, moving them into a freezer safe ziplock bag once frozen. Simply defrost overnight in the refrigerator before cooking them up. They can be stored for several months frozen and make a quick and easy go to meal.

- Grate the cucumber, place it into a fine mesh sieve and press as much liquid out as you can. Combine with the garlic and mix well. Add the remaining sauce ingredients, stir well, cover, and refrigerate until serving. Adjust seasoning to taste before serving.

Cucumber Tomato Salad

- 1/4 red onion sliced thin
- 1 cucumber chopped
- 1 cup cherry tomatoes halved
- 1/4 cup parsley chopped
- 1/8 cup olive oil
- Juice from one lemon
- Salt and pepper
