Savory Herbed Waffles with Smoked Salmon and Hollandaise
Cheesy, savory, herbed waffles are topped with smoked salmon and rich hollandaise sauce for a hearty meal that seems fancy but is easy to prepare.

Ingredients
- 1/4 cup almond flour
- 1 tablespoons coconut flour
- 1/2 tablespoon psyllium powdered
- 1/8 cup nutritional yeast
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/3 teaspoon salt
- 1 teaspoon baking powder
- 1 tablespoon butter melted, or butter flavor coconut oil
- 2 eggs
- 1/4 cup water
- 4 ounces smoked salmon
- 2 tablespoons chives chopped, optional
- 1 tablespoon tarragon chopped, optional
Hollandaise
- 2 egg yolks
- 1 teaspoon lemon juice
- 1/4 cup butter or butter flavored coconut oil
- salt and pepper to taste
Instructions
- Whisk together all dry ingredients. Stir in eggs. Add coconut oil.
- Pour water and chopped herbs into the batter and stir until smooth. Set aside for 10 minutes to rehydrate. Make the hollandaise while you wait.
- To make the hollandaise, combine yolks, 1 teaspoon of water, lemon juice, salt, and pepper in the bottom of a jar that barely fits the head of an immersion blender. Melt the butter flavored coconut oil in a separate glass jar in the microwave until hot (or on the stovetop in a small saucepan). Blend the yolk mixture by running the immersion blender in the bottom of the jar. Without moving the blender head, slowly pour the melted oil in while blending constantly. An emulsion will form. Add salt and pepper to taste.
- Cook the waffle batter in a waffle iron for 10 minutes. (If they aren't crisp enough, you can toast them in a toaster or toaster oven. Additionally, you can cook them all up then re-crisp just before serving.)
- Top with smoked salmon and spoon hollandaise over top.

Savory Herbed Chaffles
Savory, herb filled cheesy waffles that can be made with or without dairy.

Ingredients
- 2 eggs
- 1 cup shredded mozzarella or cheddar, use Daiya cheese if dairy-free
- 1 teaspoon psyllium husk powder
- 1 tablespoon coconut flour
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 tablespoons chives chopped, optional
- 1 tablespoon tarragon chopped, optional
- 1/8 teaspoon salt
Instructions
- Lightly beat egg then add the cheese and stir to combine. Sprinkle salt, spices, herbs, psyllium, and coconut flour over top and stir to combine. Let sit 5 minutes for the coconut and psyllium to hydrate.
- Heat a waffle iron on its highest setting. Add all of the batter to the iron for an open face sandwich or half of the batter if you’d like to make two chafes for sandwiching. Cook for 3-5 minutes, or until crisp. Remove the chaffle from the iron and allow it to cool for a few minutes, during which time it will crisp even more.
Notes
Daiya brand cheese is a plant-based alternative that will melt and crisp similarly to traditional dairy-based cheese. It is slightly higher in carbohydrate than dairy-based cheese as it does contain some tapioca starch as well as chickpea and potato proteins. As such, this item should be used as an occasional treat only.
