Halloween Monster Mash
Cauliflower makes a delicious potato substitute. I like to add some green color via spinach and a bit of parsley to make this a Halloween side. To decorate this I used cream cheese and nori but you can also use Swiss cheese cut into small circles and black olives instead.

Ingredients
- 2 cups cauliflower 1 cauliflower cored and broken into florets
- 4 tablespoons butter or 2 tablespoons butter flavored coconut oil and 2 tablespoons coconut cream, if dairy-free
- 1 cup chicken stock or vegetable stock if vegetarian
- 1/2 teaspoon salt or to taste
- 1 cup baby spinach
- 1 tablespoon parsley leaves
- 1/8 cup cream cheese softened at room temperature, or Kite Hill cream cheese for dairy-free
- 1 sheet nori cut into small circles
Instructions
- Combine the cauliflower, butter, and stock in a large pot.
- Bring to a boil, uncovered and cook until there is almost no liquid left and the cauliflower is just beginning to caramelize (this is key for a good texture – too much liquid results in a runny puree), about 20 minutes on medium-high heat.
- Using an immersion blender, puree the now soft cauliflower until completely smooth. You can also transfer everything to a traditional blender and puree. Add the spinach and parsley and puree again until smooth. Season to taste with salt and pepper. Transfer to a serving bowl.
- To decorate, beat the cream cheese until light and fluffy and then transfer it to a piping bag fitted with a round tip (or a ziplock bag – just seal it and then trim one corner to use for piping). Pipe rounds of cream cheese all over the mash and top with nori circles.
