Pan Seared Advieh Chicken Breast with Avocado Tahini Sauce and Za’atar Roasted Tomatoes
Warming and floral notes from a Persian spice blend meet a rich and garlicky tahini avocado sauce, both of which get a lift from bright sweet acidic pops of roasted cherry tomatoes in this quick yet delicious Middle Eastern-inspired dish. I also like to cook chicken thighs like this, though the cooking time will need to be extended a bit.

Ingredients
Chicken
- 1 1/2 pounds chicken breast 4 6-ounce chicken breasts, boneless and skinless, or chicken thighs
- 2 tablespoons Advieh
- salt to taste
Za’atar Roasted Tomatoes
Avocado Tahini Sauce
- 1 avocado pitted and peel removed
- 1 tablespoon tahini
- 1 garlic clove minced
- 2 tablespoons lemon juice 1 lemon
- 1/4 teaspoon cumin ground
- 1/8 teaspoon coriander ground
To Serve
- parsley optional
- dried rose petals optional
Instructions
- Pound the chicken to and even 1/4 inch thickness between two pieces of plastic wrap. I often use a rolling pin or large bottle in this task. Season the chicken with the Advieh and set aside.
- Toss the cherry tomatoes with olive oil and season to taste with salt. Place onto a broiler-safe pan and broil for 5-8 minutes, or until lightly charred. Sprinkle with Za’atar and set aside.
- Combine all the avocado tahini sauce ingredients in a blender and blend until completely smooth. Taste and adjust seasoning to taste, adding more salt or lemon, as desired.
- Heat a large pan over medium-high heat and when hot, add the oil and lay chicken in the pan. Keep the chicken in a single layer and cook for 2-5 minutes per side, or until cooked through.
- To serve, spoon avocado onto plates, add the chicken, and scatter tomatoes over top. Garnish with fresh herbs and rose petals, if desired.
