Almond, Pistachio, and Apricot Protein Balls
These protein balls are flavored with almond and then mixed with chopped pistachio and apricot for a delicious protein bite. You can shape them into balls or else press them into a pan and cut into bars. Either way, they are great snacks for travel.

Ingredients
- 1 cup egg white protein powder sugar free vanilla flavored
- 4 tablespoons collagen peptides optional
- 1 1/2 cups almond flour
- 1/4 teaspoon salt
- 1 teaspoons almond extract start with 1 and add 1/2 teaspoon more to taste if desired
- 1/3 cup monk fruit powdered, or 1/2 teaspoon stevia glycerite, or more, to taste
- 2 tablespoons water or more as needed
- 1/2 cup pistachios chopped fine
- 1/2 cup apricots chopped fine
Instructions
- Combine protein powder, collagen, almond flour, sweetener, and salt in a food processor. Pulse to combine evenly.
- With the food processor running, stream the water, and almond extract. Process until the batter comes looks crumbly. To test if it is ready, press some between your fingers. If it sticks together well, stop adding water. Otherwise, add more water a couple teaspoons at a time until it does. Add the pistachios and apricots and pulse to chop then use your hands to press all the batter into a large ball.
- Roll into tablespoon size balls and store in the refrigerator.
