Creamy High Protein Pasta Salad

Pasta in a tangy and creamy sauce along with smoky sausage and plenty of vegetables is a satisfying and easy meal rich in protein.

Ingredients

  • 8 ounce box high protein pasta such as lupin based pasta
  • 1/4 cup light mayo
  • 1/2 box light laughing cow cheese 4 wedges
  • 1 tablespoon ranch seasoning mix
  • 1/4 red onion minced
  • 2 green onions slices
  • 1 pound smoked turkey summer sausage quartered lengthwise and sliced thin
  • 10 ounces marinated artichoke hearts drained and chopped
  • 1 bell pepper diced
  • 6 ounces cherry tomatoes halved
  • salt and pepper to taste

Instructions

  • Cook the pasta according to the directions on the box.
  • While the pasta cooks, stir together the mayo, cheese, and seasoning until completely smooth in a large bowl. Stir in the onions, sausage, artichoke hearts, and bell pepper and set aside.
  • Drain the pasta and stir into the reserved cheese mixture. Fold in the cherry tomatoes and season to taste with salt and pepper. Serve at room temperature or chilled.

Notes

You can also make your own ranch seasoning to add here:
  • 1 tablespoon buttermilk powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon parsley, dried
  • 1/8 teaspoon dill, dried
  • 1/8 teaspoon chives, dried
  • 1/8 teaspoon salt
  • pinch black pepper, fresh ground
