Tomato Salad with Pomegranate and Mint
Bright and fruity salad with fresh pops from mint is well complimented with a cool and creamy yogurt for this easy and refreshing Mediterranean side.

Ingredients
- 1 large heirloom tomato diced
- 1/2 cup pomegranate arils
- 1 tablespoon pomegranate molasses
- 1 tablespoon mint minced, or parsley
- salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup yogurt or coconut yogurt, or tofu, whipped for dairy-free
Instructions
- Season the diced tomato generously with salt and set into a fine mesh strainer in the sink to drain for 10 minutes.
- Stir together the drained tomatoes, pomegranate seeds, pomegranate molasses, mint, and olive oil. Season to taste with salt and pepper.
- To serve, spread the yogurt onto a plate. Top with the salad and serve.
