Green Goddess Deviled Eggs
Fresh and herbal, these are a fun take on the classic deviled egg. These can be made lighter with some cottage cheese or full fat with mayonnaise in the classic preparation. Use pre-cooked hardboiled eggs for a no-cook and faster prep.

Ingredients
- 12 large eggs
- 6 tablespoons 4% fat cottage cheese or 2 tablespoons mayonnaise for high fat and dairy-free
- 2 tablespoons Greek yogurt or sour cream, or 2 tablespoons mayonnaise for dairy-free
- 2 tablespoons basil
- 2 tablespoons parsley
- 2 tablespoons tarragon
- 2 tablespoons chives
- 1 clove garlic clove peeled
- 1 tablespoon lemon juice 1 lemon
- zest of 1 lemon
- 1/4 teaspoon salt
Instructions
- Place the eggs in medium saucepan, cover with 1 inch of water, and bring to boil over high heat. Remove pan from heat, cover, and let sit for 10 minutes. Fill a medium bowl half full with cold water and add 1 tray of ice cubes. Transfer eggs to ice water bath and let sit 5 minutes.
- Peel eggs and then slice the eggs in half lengthwise. Remove the yolks with a spoon, and place them in the bowl of a food processor. Set the whites aside.
- Blend the cottage cheese, yogurt, basil, parsley, tarragon, chives, garlic, lemon juice, zest, and salt until smooth in a food processor. Add the yolks and blend until smooth again. Season with salt and pepper to taste.
- Transfer the mixture to a piping bag fitted with a large star tip, or use a plastic sandwich bag with the tip of one corner snipped off.
- Trim a sliver off the bottoms of the cooked egg whites before you fill them to keep them from rolling.
- Pipe the yolk mixture into the egg whites and serve with fresh herbs as a garnish, if desired.
