Chicken Bruschetta
Quick and easy yet full of flavor, this is a perfect protein sparing modified fast meal or light main.

Ingredients
- 5 ounces cherry tomatoes, quartered
- 2 tablespoons basil cut into ribbons
- 2 tablespoons balsamic vinegar
- salt and pepper to taste
- 1 teaspoon avocado oil
- 1 pound chicken breast pounded to 1/2 inch thick
Instructions
- Combine the cherry tomatoes, basil, balsamic, salt and pepper in a small bowl and toss to combine evenly, set aside.
- Season the chicken with salt and pepper.
- Heat a large pan over medium-high heat and when hot, add the avocado oil. When the oil is hot, add the chicken and cook in a single layer for 4-5 minutes per side, or until just cooked through.
- Top with the tomato mixture and serve.
