Roasted Okra
Okra has a reputation for being slimy but if you cook it right, you will get a delicious vegetable with a tender and crisp vegetable that makes a wonderful side or salad topper.

Ingredients
- 1 pound okra 1 bag frozen sliced okra, fully thawed
- 2 tablespoons avocado oil
- salt and pepper to taste
Instructions
- Preheat the oven to 450ĀŗF. Add the okra and oil to a rimmed baking sheet and season generously with salt and pepper. Toss to coat evenly and roast at 450ĀŗF for 15-25 minutes, or until golden, stirring occasionally.
