Okra has a reputation for being slimy but if you cook it right, you will get a delicious vegetable with a tender and crisp vegetable that makes a wonderful side or salad topper.
Preheat the oven to 450ºF. Add the okra and oil to a rimmed baking sheet and season generously with salt and pepper. Toss to coat evenly and roast at 450ºF for 15-25 minutes, or until golden, stirring occasionally.
