Acai Smoothie

This is quick, easy, delicious, and packed full of vitamin E!

Ingredients

  • 6 large egg whites pasteurized (I like to use the boxed version so I am not wasting egg yolks), you can lightly scramble them if you prefer not to eat raw egg – this will also make a thicker smoothie
  • 1/2 cup almond milk or coconut beverage for nut-free
  • stevia glycerite to taste
  • 1/4 cup Greek yogurt fat-free, or your favorite dairy-free alternative
  • pinch of salt
  • 2 packs açaí 200g, frozen
  • 1 cup ice cubes
  • 1/2 tablespoon lemon juice

Instructions

  • Add all ingredients to a high power blender and blend until completely smooth. Adjust sweetener to taste and serve.
