Marinated Olives
Rich olives are brightened with garlic, herbs, and zest for an easy and elegant no-cook appetizer. These are perfect for a Halloween meal, especially if you use black olives and orange zest.

Ingredients
- 1 cup olives drained
- 1/4 cup extra-virgin olive oil
- 1 garlic clove smashed
- 1 tablespoon chopped fresh parsley
- zest of 1 orange or a drop or two of orange oil
- 1 tablespoon lemon juice
- 1 teaspoon monk fruit powdered
- 1/2 teaspoon fennel seed
- 1 sprig fresh thyme leaves
- 1/8 teaspoon red pepper flakes omit for nightshade-free
Instructions
- Combine all ingredients in a bowl and let stand at at room temperature 1 hour to marinate. The marinated olives will keep for up to one week refrigerated.
