Marinated Olives

Rich olives are brightened with garlic, herbs, and zest for an easy and elegant no-cook appetizer. These are perfect for a Halloween meal, especially if you use black olives and orange zest.

Ingredients

  • 1 cup olives drained
  • 1/4 cup extra-virgin olive oil
  • 1 garlic clove smashed
  • 1 tablespoon chopped fresh parsley
  • zest of 1 orange or a drop or two of orange oil
  • 1 tablespoon lemon juice
  • 1 teaspoon monk fruit powdered
  • 1/2 teaspoon fennel seed
  • 1 sprig fresh thyme leaves
  • 1/8 teaspoon red pepper flakes omit for nightshade-free

Instructions

  • Combine all ingredients in a bowl and let stand at at room temperature 1 hour to marinate. The marinated olives will keep for up to one week refrigerated.
