High Protein Blueberry Pancakes (or Waffles)

This is a low fat and high protein pancake recipe that can also be made into waffles!

Ingredients

  • 1 cup 4% cottage cheese
  • 2 eggs
  • 2 scoops vanilla whey protein powder sugar free
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • pinch coriander
  • 1/4 teaspoon salt
  • several drops stevia glycerite or 2 tablespoons monk fruit, powdered
  • 1/2 cup blueberries fresh or frozen

Instructions

  • Combine all ingredients except blueberries and syrup in a blender and blend until completely smooth.
  • Heat a large non-stick pan over medium heat. When hot, spray with a little bit of avocado oil and then pour small circles of about 3 tablespoons of batter onto the skillet (will make about 8 pancakes). Add the blueberries to the batter as the first side is cooking. Cook until the pancake is mostly set, bubbles appear throughout, and the bottoms are golden, about 5 minutes. Flip and brown the second side, another 3 minutes.

Notes

To make waffles, heat a waffle iron and spray it with avocado oil spray. Spoon the batter onto the iron and cook according to your waffle iron’s directions. Generally, 1/4 cup of batter onto the iron. Cook for 4 minutes, until crisp. Repeat with remaining batter.
