Combine all ingredients except blueberries and syrup in a blender and blend until completely smooth.
Heat a large non-stick pan over medium heat. When hot, spray with a little bit of avocado oil and then pour small circles of about 3 tablespoons of batter onto the skillet (will make about 8 pancakes). Add the blueberries to the batter as the first side is cooking. Cook until the pancake is mostly set, bubbles appear throughout, and the bottoms are golden, about 5 minutes. Flip and brown the second side, another 3 minutes.
Notes
To make waffles, heat a waffle iron and spray it with avocado oil spray. Spoon the batter onto the iron and cook according to your waffle iron’s directions.
