Mazapan (Mexican Peanut Candy)
Sweet, peanutty, and a bit crumbly, with a hit of salt and vanilla, these Mexican peanut candies are an easy and delicious no-cook treat.

Ingredients
- 2 cups peanuts or pistachios
- 1 cup monk fruit powdered
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Combine all ingredients in a blender or food processor and process till completely smooth and just beginning to clump together. Press into molded shapes and wrap individually. These will save for 1 week refrigerated or 1 month in the freezer.
