Sun Dried Tomato Vinaigrette

This is great for green salads, chicken salads, or even noodle salads.

Ingredients

  • 1/2 cup avocado oil
  • 1/3 cup sun-dried tomatoes drained
  • 1/4 cup red wine vinegar
  • 3 tablespoons basil or parsley
  • 1/2 tablespoon Dijon mustard optional (helps to emulsify the dressing)
  • 1 garlic clove peeled
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper fresh ground

Instructions

  • Combine everything in a high powder blender and process until smooth. Taste and adjust with more salt or vinegar as needed. You can add a bit of monk fruit, if you’d like to sweeten this more as well.

Notes

Makes about 1 cup, serving size: 2 tablespoons.
