Crispy Pizza Waffles

Crispy pizza waffles to serve with your favorite pizza or marinara sauce!

Ingredients

  • 1/2 medium eggplant peeled and sliced 1/2 inch thick
  • 1 egg beaten or 1 egg white for lower fat
  • 1 cup pork panko
  • 1/4 teaspoon Italian Seasoning
  • 1/4 cup pizza sauce
  • 1/2 cup shredded mozzarella

Instructions

  • Combine the pork panko and Italian Seasoning in a small bowl. Set aside.
  • Place the beaten egg on a shallow plate. Dip an eggplant slice into the egg, turning to coat evenly. Press into the panko mixture, pressing to coat evenly.
  • Preheat a waffle iron and spray it generously with oil.
  • Place the coated eggplant onto the waffle iron and cook until crisp, about 5 minutes. Transfer to a wire rimmed cooling rack set on a baking sheet.
  • Cook all waffles then sprinkle mozzarella over top. Broil briefly to melt the cheese.
  • Serve immediately. With pizza sauce for dipping.
