Combine the pork panko and Italian Seasoning in a small bowl. Set aside.
Place the beaten egg on a shallow plate. Dip an eggplant slice into the egg, turning to coat evenly. Press into the panko mixture, pressing to coat evenly.
Preheat a waffle iron and spray it generously with oil.
Place the coated eggplant onto the waffle iron and cook until crisp, about 5 minutes. Transfer to a wire rimmed cooling rack set on a baking sheet.
Cook all waffles then sprinkle mozzarella over top. Broil briefly to melt the cheese.
