
Waffles
Light and tender waffles get a textural and nutritional boost from a bit of protein powder. These are flavored with vanilla but you can use any extract you like. Serve with a bit of powdered sweetener, whipped cream, or keto-friendly syrup for an indulgent yet healthy breakfast.

Ingredients
- 1/2 cup almond flour
- 1 tablespoon coconut flour
- 2 tablespoons protein powder
- 2 tablespoons monk fruit powdered
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 ounces cream cheese softened, or sour cream, or Kite Hill cream cheese for dairy-free
- 2 tablespoons butter melted, or butter flavored coconut oil for dairy-free
- 1 teaspoon vanilla extract
- 3 eggs
- avocado oil spray for the waffle iron
Instructions
- Combine all ingredients in a blender and process until completely smooth.
- Heat a waffle iron and spray it with avocado oil spray. Spoon the batter onto the iron and cook according to your waffle ironās directions. Generally, 1/4 cup of batter onto the iron. Cook for 4 minutes, until crisp. Repeat with remaining batter.
Notes
Makes 8 small waffles or 4 large.
