High Protein Pumpkin Waffles
These waffles are packed with protein and a bit of pumpkin puree and pumpkin pie spice for a delicious variation on a classic waffle. This recipe makes 1-2 large waffle or 4-5 mini waffles.

Ingredients
- 1 egg
- 3 tablespoons cream cheese softened, or Kite Hill cream cheese for dairy-free
- 3 tablespoons pumpkin puree
- 1/4 cup egg white protein powder vanilla flavor
- 2 tablespoons collagen peptides
- 1/2 teaspoon baking powder
- 1/2 teaspoon pumpkin pie spice
- pinch of salt
Instructions
- Combine all ingredients in a blender and process until smooth. Alternatively, whisk cream cheese and pumpkin puree until smooth then whisk in egg until fully combined. Add remaining ingredients and stir until a smooth batter forms.
Notes
To make this for a protein sparing modified fast, omit the cream cheese. I find that the texture is more dry, especially if overcooked but a generous helping of sugar free maple syrup is nice.
