These waffles are packed with protein and a bit of pumpkin puree and pumpkin pie spice for a delicious variation on a classic waffle. This recipe makes 1-2 large waffle or 4-5 mini waffles.
Combine all ingredients in a blender and process until smooth. Alternatively, whisk cream cheese and pumpkin puree until smooth then whisk in egg until fully combined. Add remaining ingredients and stir until a smooth batter forms.
