Bacon Jam
This savory spread makes a delicious appetizer. Serve with parmesan crisps, keto crackers, or pork rinds. This is also delicious with eggs or as a garnish to burgers. This is adapted from a Martha Stewart recipe.

Ingredients
- 1 1/2 pounds bacon
- 1 onion diced
- 2 cloves garlic minced
- 1/4 teaspoon maple extract
- 1/4 cup apple cider vinegar
- 1/2 cup allulose liquid
- 1/2 tablespoon molasses or yacon syrup or molasses extract
- 1/2 teaspoon dry mustard
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon Tabasco omit for nightshade-free
Instructions
- Add the bacon to a medium size pot and cook over medium-high heat, stirring occasionally until fat is rendered and the bacon is crisp, about 15 minutes. Using a slotted spoon, transfer bacon to a paper towel lined plate and set aside. Pour off all but 2 tablespoons of fat.
- Add the onions and cook until soft and beginning to caramelize, about 10-15 minutes. Add the garlic and cook until fragrant, one minute more.
- Stir in the remaining ingredients and reduce heat to a simmer. Cook until thick and syrupy, another 10 minutes.
- Transfer to a food processor and pulse until coarsely chopped up – you want the bacon broken down but to still have some texture. Serve warm. Leftovers will save for a couple of weeks, refrigerated.
