Bacon Jam

This savory spread makes a delicious appetizer. Serve with parmesan crisps, keto crackers, or pork rinds. This is also delicious with eggs or as a garnish to burgers. This is adapted from a Martha Stewart recipe.

  • Add the bacon to a medium size pot and cook over medium-high heat, stirring occasionally until fat is rendered and the bacon is crisp, about 15 minutes. Using a slotted spoon, transfer bacon to a paper towel lined plate and set aside. Pour off all but 2 tablespoons of fat.
  • Add the onions and cook until soft and beginning to caramelize, about 10-15 minutes. Add the garlic and cook until fragrant, one minute more.
  • Stir in the remaining ingredients and reduce heat to a simmer. Cook until thick and syrupy, another 10 minutes.
  • Transfer to a food processor and pulse until coarsely chopped up - you want the bacon broken down but to still have some texture. Serve warm. Leftovers will save for a couple of weeks, refrigerated.
