Tahini and Lemon Sauce
This makes a good salad dressing or all purpose sauce for any meat or fish. Feel free to add fresh herbs or spices to play with the flavor profile.

Ingredients
- 1/2 cup tahini paste
- 1/4 cup water warm
- 1 tablespoon coconut aminos or gluten-free soy sauce
- 2-4 tablespoons lemon juice start with 2 and add more if desired
- zest of 1 lemon optional
- 1 garlic clove minced
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Instructions
- Whisk the tahini to loosen then add the water, a bit at a time, whisking until smooth. You can vary the amount of water to vary the consistency – add more to thin the sauce. Whisk in remaining ingredients. Alternatively, combine everything in a blender and blend until smooth. Taste and adjust seasoning as desired. The sauce will keep for one week in the refrigerator.

Makes 1 cup, Serving Size: 2 tablespoons.
