Mocha Breakfast Pudding
This is a creamy, easy, no-cook breakfast pudding enriched with protein. It’s like dessert for breakfast. Coffee enhances the chocolate flavor. 1 teaspoon gives a subtle flavor, so add more to taste. You can also add a shot of strongly brewed espresso, if you like, replacing a bit of the cream. Feel free to swap out the coffee for any extract you like. Orange, mint, raspberry, or almond would all be excellent variations. This recipe is adapted from Maria Emmerich’s chocolate protein pudding.

Ingredients
- 10 hard boiled eggs peeled
- 2 tablespoons collagen
- 1/4 cup vanilla protein powder egg white based
- 13.5 ounce can coconut milk or 1 3/4 cup heavy cream, if not dairy-free
- 1/2 cup monk fruit powdered, or liquid sweetener, to taste
- 1/4 cup cocoa powder
- 1 teaspoon coffee extract or more, to taste
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
Instructions
- Combine all ingredients in a high powdered blender and blend on high until completely smooth. Refrigerate overnight before serving.

Serving size is 1/2 cup.
