Chilled Cucumber Noodle Side

This salad is refreshing and crisp. It makes a great side to any Asian meal.

Instructions

  • Cut the cucumber into noodles with a spiralizer and toss with salt. Set in a colander to drain for 15 minutes. 
  • Combine all remaining ingredients except cucumber in a large bowl. Stir until monk fruit is dissolved, add cucumber and toss to coat. Adjust seasonings to taste and serve.
