Chilled Cucumber Noodle Side
This salad is refreshing and crisp. It makes a great side to any Asian meal.

Ingredients
- 1 english cucumber zoodled
- 1 tablespoon toasted sesame oil
- 1 teaspoon monk fruit granulated, or more, to taste
- 1/4 teaspoon salt or more, to taste
- 2 tablespoons rice vinegar
Instructions
- Cut the cucumber into noodles with a spiralizer and toss with salt. Set in a colander to drain for 15 minutes.
- Combine all remaining ingredients except cucumber in a large bowl. Stir until monk fruit is dissolved, add cucumber and toss to coat. Adjust seasonings to taste and serve.
