Chocolate Mint Protein Shake
This protein shake is adapted from Maria Emmerich's chocolate pudding, which uses hard boiled eggs as a thickener and protein source. This produces a rich and creamy shake that tastes best after sitting for one day in the refrigerator. You can't taste the egg at all. It can be stored for up to four days.

Ingredients
- 4 eggs hard boiled and peeled
- 13.5 oz coconut milk
- 1 cup coconut beverage or almond milk
- 4 tablespoons cocoa powder
- 1 teaspoon stevia glycerite
- 1/2 teaspoon liquid monk fruit
- Pinch of salt
- 1 teaspoon vanilla
- mint extract to taste
Instructions
- Combine all ingredients in a blender and blend until completely smooth. Taste after blending and adjust sweetener, cocoa, and salt to your liking.
Notes
A high powered blender or bullet works best for this as the egg needs to be completely smooth or else the texture is not right.
