
Artichoke Hearts Gratin
These are a light and refreshing take on artichokes that make for a wonderful appetizer.

Ingredients
- 14 ounces canned whole artichoke hearts halved (or frozen and thawed)
- 1 teaspoon olive oil or avocado oil
- salt and freshly ground black pepper to taste
- 2 tablespoons pork panko BBQ or chili flavor pork rinds, crushed
- zest of one lemon
- 1/8 cup finely grated Parmesan or nutritional yeast, if dairy-free
- 1 tablespoon olive oil
- 1 tablespoon Italian parsley chopped
Instructions
- Halve artichoke hearts and drain well on a paper towel for 15 minutes then season with salt and pepper.
- Line a baking pan with parchment.
- Place artichoke heart halves cut side up on the prepared baking sheet. Sprinkle with pork panko, lemon zest, and Parmesan cheese and then drizzle with olive oil.
- Broil until well browned on top, 7-10 minutes. Sprinkle with parsley and serve with lemon.
