Halve artichoke hearts and drain well on a paper towel for 15 minutes then season with salt and pepper.
Line a baking pan with parchment.
Place artichoke heart halves cut side up on the prepared baking sheet. Sprinkle with pork panko, lemon zest, and Parmesan cheese and then drizzle with olive oil.
Broil until well browned on top, 7-10 minutes. Sprinkle with parsley and serve with lemon.
