Ginger Coleslaw

This creamy slaw is surprisingly refreshing with a bit of spice in the form of fresh grated ginger.

Ingredients

Slaw:

  • 2 cups green cabbage 1/2 head, shredded
  • 2 cups red cabbage 1/2 head, shredded
  • 1 carrot shredded
  • 1/4 cup green onions sliced

Dressing:

  • 1 cup heavy cream
  • 1/2 cup mayo
  • 2 tablespoons white vinegar or to taste
  • 1/4 cup monk fruit granulated
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 1/2 cup ginger grated, or to taste

Instructions

  • Mix all dressing ingredients together and taste, adjust seasoning and then toss with cabbage mix.
