Avocado Truffles
These keto-friendly truffles are barely adapted from Dr Tara's Sunshine and are intensely chocolatey and dairy-free! The quality of the cocoa is important here. You cannot taste the avocado but it provides the same creamy mouthfeel as the traditional dairy-based confections.

Ingredients
- 1 avocado peeled and pitted
- 1/2 cup cocoa powder Valrhona, plus more for rolling
- 1/4 cup powdered monk fruit
- 1/2 teaspoon vanilla
- Pinch of salt
- 1 tablespoon avocado oil
Instructions
- Blend all ingredients until smooth.
- Place in the refrigerator until firmed, about an hour.
- Roll into balls and coat with cocoa powder.
- Keep in the refrigerator until serving.
