Tomato Salad
This salad comes together fast and is best made with high quality tomatoes. Use any fresh herbs you like to play with the flavor profile.

Ingredients
- 2 cups tomatoes sliced, 2 medium
- 1 green onion thinly sliced, or 1/4 red onion
- 3 tablespoons fresh parsley chopped (or any herb of choice)
- 2 tablespoons fresh basil chopped, optional
- 2 tablespoons olive oil
- 2 tablespoon red wine vinegar or apple cider vinegar
- 1/2 tablespoon monk fruit granulated
- 1/8 teaspoon salt or more to taste
- 1/8 teaspoon pepper fresh ground
Instructions
- Combine all ingredients and toss to coat evenly. Serve.
