Mascarpone with Berries
This is an easy, no-cook dessert that is ready quickly. Feel free to add any extract you like to the mascarpone. Almond is a nice variant. If you make the berry compote, you can also add fresh herbs such as mint, thyme, or lavender.

Ingredients
- 8 ounces mascarpone cheese or ricotta
- 1/2 cup heavy cream
- 1/2 cup monk fruit powdered, or liquid monk fruit, to taste
- 1/4 teaspoon vanilla extract
- pinch of salt
- zest of 1 lemon
- 1 cup fresh berries
Instructions
- Beat the mascarpone with the cream until very thick. Add the zest, monk fruit, salt, and vanilla and beat again.
- Serve the cream with the berries.
Notes
I also like to serve the mascarpone with a berry compote, which is only a little bit more effort.
